Delicious Tomato Herb Sauce Recipe

  • 1 onion
  • 4-6 cloves of garlic
  • 2 tbsp of fresh parsley (dried also works)
  • 2 tbsp of fresh basil + few leaves for garnish (dried also works)
  • chopped fresh chilli or chilli paste to taste
  • 1/2 tsp ginger
  • 1/2 tsp curry powder
  • 1/2 tsp tumeric
  • 1/2 tsp cumin
  • 200ml vegetable stock
  • 400ml pasata
  • 2 tbsp tomato puree
  • 1 tsp honey (optional)

Directions

It’s a real throw it all in type recipe, however we like to sauté the onion, garlic and ginger first until soft and then add in all the rest of the ingredients. Also add salt and pepper to taste.

This recipe can be adapted by using less of the spices or by adding in more. If you find that the sauce is a little bitter add in the honey to counteract it.

You can leave this to cook or use straight away. Top your dish off with some cheese and you have yourself a simple but delicious tomato herb sauce.

***TOP TIP** Add in a bunch of veggies like carrots or spinach and blend until smooth. It’s a great way for you to get your kids to eat veggies without them knowing!

This sauce is a great for dishes other than pasta. You can cook cod or any other white fish in it, use it as a meatball sauce, use it as a sauce or marinade, the uses are endless! Check out these quick meal ideas for the nights you don’t have a lot of energy!
