Easy Butternut Squash Soup

Easy Butternut Squash Soup

Ingredients

  • 1 whole butternut squash (a medium size squash)
  • 3 medium carrots
  • paprika
  • 2 small onions
  • 4-5 garlic cloves
  • pinch of ginger
  • extra virgin olive oil
  • 4 cups veggie stock
  • 1 tsp tomato paste
  • pinch of cumin & smoked paprika
  • pinch of basil
  • black pepper to taste

Directions

  1. Preheat your oven to 175 degrees celcius. Cut up the butternut squash and the carrot and place on a baking tray. Sprinkle with paprika and lightly coat with olive oil. Place in the oven for around 45 minutes or until the veggies are tender.
  2. In a pot caramelize the chopped onion on a low heat and add in the garlic and ginger. You can add a drop of water to it to stop it from sticking.
  3. When everything is cooked, allow it all to cool for 15 minutes or so.
  4. Add all the vegetables into the pot and blend with a hand blender until completely smooth.
  5. Add in the stock and remaining seasonings, stirring until combined.
  6. Bring to the boil and then reduce heat and allow to simmer for a few minutes.

***TOP TIPS***

  • If the soup is too thick you can add more stock, a little at a time.
  • If you like a more creamy soup, you can add in 1/2 cup of coconut milk.
  • Another way to add a lot of flavour is by roasting garlic. Cut off the top of the garlic, drizzle oil over it and wrap in tin foil. Cook in the oven for around 40 mins or until soft. Then add it to your soup for a deeper flavour.
