Apple Streusel Muffins

We are all about the cinnamon this month, so why not make some delicious apple streusel muffins!

With another lockdown looming, spending time in the kitchen can be a really good release. The kitchen is our happy place and we find that cooking and baking is a great way to focus on something.

Apple Streusel Muffins

Ingredients

  • 280g plain flour
  • 1 tbsp baking powder
  • 1/2 tsp ground cinnamon (add more if you really like it)
  • pinch of salt
  • 115g soft light brown sugar
  • 1 large cooking apple
  • 2 eggs
  • 250ml milk
  • 85g butter

Streusel topping

  • 50g plain flour
  • 1/2 tsp ground cinnamon
  • 35g butter
  • 25g soft light brown sugar

Method

  1. Preheat the oven to 200°C. Grease a muffin tin or put paper cases in it.
  2. Make the streusel topping by sifting the flour and cinnamon in a bowl. Take the soft butter and rub it into the flour mixture with your fingertips until it’s like fine breadcrumbs. Stir in the sugar and leave to the side.
  3. In a separate bowl, sift the flour, baking powder, cinnamon and salt together. Stir in the sugar. Chop up the apples and finely or chunky as you wish and add to the flour mixture.
  4. Melt the butter and while it is cooling lightly beat the eggs. Add this to the flour mix and stir in gently until all combined.
  5. Spoon evenly into the paper cases or the tray, and top with the streausel topping.
  6. Bake in the oven for around 20 minutes or until golden brown. If you are unsure if they are done, check with a cocktail stick. If it comes out dry, they are done.
  7. Leave to cool on a wire rack, or serve hot with some ice cream!
