Summery Coconut Curry Recipe

Here is one of our favourite summery recipes:

Coconut and Tomato Curry

Serves 4

4 large chicken fillets

Low-calorie spray oil

Veg of your choice: I like onion and green peppers, sliced

For the sauce:

2 tsp yellow curry paste

1 tsp garlic purée

1 x 400g tin of chopped tomatoes

300ml light coconut milk

1 tbsp soy sauce

1 tsp fish sauce

1 tbsp sweet chilli sauce

Directions 

1 I like to boil the chicken for this recipe. Put the whole fillets in a large pot of boiling water and let them simmer for 15–20 minutes until cooked through.

Remove from the water, then use a couple of forks to shred the chicken. Set aside while you prepare your veg of choice.

 2 In a wok or high-sided pan, spray a little oil, add in your sliced veg and cook through until just tender. Remove from the pan and pop aside while you prepare your sauce.

3 Heat the curry paste in the wok or high-sided pan for 1–2 minutes, then add the garlic purée and the tin of tomatoes.

Stir and heat for 5 minutes, then add in the rest of the ingredients.

4 Bring up the heat to a boil, add in the shredded chicken and cooked vegetables and mix well, then turn down the heat and allow to simmer gently for 10 minutes.

5 Serve on a bed of boiled rice.
