Maple Chicken Burger Recipe

Here is one of our favourite summery recipes:

Maple Chicken Burger

Serves 2

1 egg

30g panko breadcrumbs

1 tbsp lemon pepper

2 chicken fillets

Low-calorie spray oil

4 bacon medallions

4 tbsp maple syrup

½ tsp ground cinnamon

To build the burgers:

2 wholemeal buns

2 tbsp Frank’s RedHot Buffalo Wings Sauce (available in supermarkets)

½ a head of lettuce, leaves separated

2 gherkins, sliced into rounds

Directions

1 Get yourself two bowls, crack your egg into one and give it a whisk, then put your breadcrumbs and lemon pepper into the other and mix it up.

 2 Grab your fillets and butterfly them (see page 36), then one by one dip them first into the egg and then into the breadcrumbs, making sure to get both sides evenly covered.

3 You can either cook the fillets in the airfryer (15 minutes at 180°C) or on the pan – I usually do them on the pan for about 5–7 minutes each side. For either cooking method give your fillets a couple of sprays of oil before cooking.

4 While the chicken is on, grab your bacon medallions and slice them into small strips lengthways, kinda like mini bacon fries. Pop them on another small pan with a spray of oil and cook on a medium heat for a couple of minutes until fully cooked and crisping up. While the bacon bits are cooking I usually add a teaspoon of maple syrup to the pan and mix up just to give them a light coating.

5 Get your maple syrup into a pot, add in the cinnamon and put on a low heat for a couple of minutes until warmed up, then get ready to build your burger.

6 Toast your buns, then add a tablespoon of the Frank’s sauce to each bottom bun and spread out, following up with the lettuce.

7 Next grab your chicken fillets (one at a time) and pour over half the maple and cinnamon sauce – as much of it as possible. I usually do this over the pan as it can be messy.

8 Then add the fillet to the bun and top that with the bacon, sliced gherkin, and finally the top bun.
