Corn Flake Coated Fish

If you can’t seem to get your batter crispy enough, try corn flake coated fish.

Fish and chips is such a house hold staple and for a great reason! It is an easy meal to make and one that generally goes down a treat with the whole family. If you want to make your own fish fingers, but ones the kids will eat, this is for you.

This is a great healthy alternative to using heavy batters but also makes for a really crispy coating. Who would have thought that corn flakes would make fish so tasty!

Corn Flake Coated Fish Recipe

Serves 4

Ingredients

  • 100g (3 1/2oz) cornflakes
  • Salt & pepper to taste
  • 500g skinless, firm white fish e.g. hake or cod
  • 4 tbsp plain flour
  • 1 egg, beaten
  • ketchup, to serve (optional)

Method

  1. Preheat the oven to 180 degrees.
  2. Crush the cornflakes by either using an electric blender, or put them in a plastic bag and bash them with a rolling pin.
  3. Put into a bowl with salt and pepper.
  4. Cut up the fish in chunks and coat with flour in a bowl.
  5. Dunk the fish in the egg and then into the cornflakes, making sure it is completely coated.
  6. Put them on a baking tray, spray with a little bit of oil and cook in the oven for 8 minutes or until cooked through. You can also shallow fry them in oil, but it isn’t necessarily as healthy.

Serve with homemade chips and mushy peas for the full fish and chips meal! This also works so well with salmon instead of cod and is a great way to introduce new foods into a kids diet. It is so yummy you need to make this right away!
